Almost everything in my wardrobe has either been; stained for ages with each new stain being added like a battle scar, stained in one spot that is just impossible to miss and looks like a hobo, or is destined to be stained in a matter of minutes as soon as it enters the kitchen.
I’m really not that messy most of the time but if you only knew how much time I spend in the kitchen you would understand that the odds of keeping my clothes clean are not in my favor. It’s okay. Like I said, I think I’m finally learning to accept this fact. I just have to consider the spot of tomato sauce on my sleeve and the stripe of green whatever-it-is on the front of my shirt as symbols of my time spent putting love into food. It adds character or something, right? right….? Although, streaks of chocolate on your pants can be both unconvincing and embarrassing to explain if you know what I mean. Yeah.
You know what makes some of the worst stains; beets. They are incredible for health purposes, they add a ton of gorgeous natural color to whatever you put them in, and they are naturally very sweet. Yep, beets get along very well with your body. It’s the clothes that don’t agree with all of the wonderful attributes of the beet.
I’m doing an awesome job introducing this smoothie and trying to convince you to make it aren’t I? Just wear an apron or maybe an old T-shirt. A tie-dye T-shirt.
Okay, but in all seriousness, you really should try this smoothie. It’s packed with nutrition and the kids loved it. The beets give it the prettiest color and they thought it was full of berries and had no idea how many healthy things were in it.
This is perfect for your healthy New Year’s resolution or detox plans, and it’s dairy-free, nut free, gluten free, and vegan. It would also be a fun and healthy breakfast for Valentine’s day!
- 1 cup beets, peeled and cooked (about 1 medium)
- 1 small avocado
- 2 bananas
- 1 1/2 cups blueberries
- 1 cup 100% orange juice
- 1 teaspoon pure vanilla extract
- honey or agave nectar to taste
- 1/2 cup ice cubes
- 1/2 cup more liquid (water or juice) for a thinner consistency
- 1 tablespoon chia or flax seeds
- 1 tablespoon coconut oil
- Put beets, avocado, banana, berries, and orange juice into blender or food processor and blend until smooth. Add vanilla and honey or agave to taste. Blend in any other desired add-ins and serve.
